Slow Cooker Cheesy Ham and Scalloped Potatoes

Weather is getting chilly. Ham and Potatoes is one of our favorite cool weather meals. MMMM comfort foods!


4-6 medium-large potatoes, thinly sliced
8-12 oz ham, diced
1 medium onion, chopped
3 TB butter
1/4 cup flour
2 cups milk
2 cups shredded cheddar
1 can cream of mushroom soup(or homemade RECIPE)
salt and pepper to taste


Layer sliced potatoes in a crock pot, I LOVE the Reynolds Slow Cooker Liners if you have not tried them!!










Sprinkle onions over potatoes












Layer the ham on top,
You can add a layer of frozen peas here for some color if you want! About 1.5 cups











                                                                                
Melt butter over medium heat in a 2 quart sauce pan.
Add flour and whisk until smooth and bubbly
 SLOWLY whisk in milk , heat and stir until thickened.







Add in cream of mushroom soup and stir until smooth












Remove from heat and add in shredded cheese and stir until the cheese is fully melted.













Pour cheese sauce over the top of the ham  DO NOT STIR. Place lid on crock pot and cook on LOW for 4-6 hours(you can kick it up to high in the last hour if need be), until the potatoes are soft. Stir gently to combine just before serving.

  1. made this today. it was really good. was out of onions but i did add 1/2 bag of frozen peas n carrots, only had american cheese so i cut it into tiny pieces to help it melt quicker. was super easy to put together.
