This is a great school morning breakfast. Mix it up and pop it in the oven right before you wake the kids, by the time they are finished dressing, hot breakfast!
And it is SO versatile! No blueberries? Add chopped apples, strawberries, peaches, dried raisins or cranberries...nuts or whatever you like!!
3 cups rolled oats....NOT INSTANT(steel cut would be even better, but cook time may be longer)
1/4 cups brown sugar(more if you prefer sweeter, we like less sweet)
1 tsp ground cinnamon
1 1/2 tsp baking powder
1/2 tsp salt
2 cups milk
1 egg
2 TB butter, melted
1 tsp vanilla extract
1 cup fresh or frozen(thawed and rinsed) blueberries(or any fruit you like)
Preheat oven to 350
Combine dry ingredients in a bowl,
add in milk, butter, egg and vanilla and stir until well combined. Fold in blueberries and spread into a 8 x 11 pan sprayed with cooking spray.
Bake for 30 minutes until bubbly and the liquid is absorbed well
here it is with strawberries!
