SuperPickle's Secret Sauce

My delicious multi-purpose sauce. Great for a fry dip, a sandwich/burger spread, my Cheeseburger and Fries pizza and much, much more!!













1/2 cup mayo
2 TB quality BBQ Sauce
1 tsp yellow mustard
1 tsp pickle juice
1/2 tsp smoked paprika
salt and pepper to taste


Combine all ingredients, mix well and allow to mingle at least 30 minutes.

Roasted Garlic and Pumpkin Alfredo

I had a yen for something pumpkin-y tonight and this totally satisfied my craving!











1/2 cup milk
6 oz cream cheese, softened
1 1/2 cups pumpkin puree
5 cloves garlic, roasted and smashed
1/2 cup parmesan cheese
1 TB dried parsley
salt and pepper




In a blender combine milk, cream cheese, pumpkin and garlic. Puree until smooth.















Pour into a sauce pan and bring to a simmer over medium heat.
Add parmesan ,oregano and salt/pepper.

Serve as you see fit!


I served my sauce over simple grilled chicken thighs and pasta.

Pizza Sauce

I use pizza sauce in so many recipe (and of course for pizzas) so I figured it would be best to put this basic sauce on here solo so I can just link it as needed... You can adjust the seasonings to your own preferences.







2 cups (approx 1-15 ounce can) tomato sauce
3/4 cup(approx 1-6 oz can) tomato paste
3/4 cup water
2 TB dried oregano
1 TB dried basil leaves
1 TB dried parsley
1 bay leaf
2 tsp garlic powder*
1 tsp onion powder*
1 tsp seasoning salt
1 tsp black pepper
2 tsp lemon juice
1/2 TB sugar
1 bay leaf
Combine all and bring to a boil, reduce heat and simmer 15-20 minuets or longer if you prefer thicker sauce. Discard bay leaf, Cool and use as needed.

This makes a good amount of sauce so I freeze it in 1/2 cup blocks(muffin tins work great , or into small ziplock bags) for easy pull out for full pizzas and in an ice cube tray for pull outs for individual pizzas


* you can omit these and use fresh onion and garlic if you like, heat 1 TB olive oil and add about 1/4 cup chopped onion and 1-2 cloves minced garlic, cook it until it is tender and fragrant, then add the remaining ingredients.....this gives it alot of extra flavor!

Tomato Spaghetti Sauce

I realized I never put this on by itself so I figured it would be a good time to do so...This time I did it in the slow cooker, it can be done stove top too.



This sauce is a nice basic sauce for any spaghetti or lasagna, this makes quite a bit of sauce (and it freezes beautifully)


1/2 to 1 lb ground beef( meatiness to your preference,  or you can use Italian sausage if you prefer)
1 medium onion, chopped
3 cloves garlic, minced
1/2 green and/or red bell pepper, chopped(more or less to your preference)
2 cups tomato sauce(1 -15 oz can)
3/4 cup tomato paste(1- 6 oz can)
4 cups tomatoes, peeled, seeded and diced*(1- 28 oz can )
1/2 cup beef broth
1 TB dried oregano
1 TB dried basil
1 TB dried parsley
1 (+) tsp white sugar
salt and pepper to taste
2 pinches of baking soda
* to peel quickly, make a small slash in the skin, dip into simmering water for 15-20 seconds and then dip into cold water, the peel will slip off easily


Cook beef with onion, garlic and bell pepper until the veggies are tender and meat is no longer pink, drain if necessary.

For Stove Top:

Return to the pot and add remaining ingredients except the baking soda.
Simmer 1-3 hours. Stir in the baking soda. Stir and simmer until thickened. Taste and adjust sugar per your preference. If it is still a bit acidic add another pinch or two baking soda and simmer 1/2 hour more.



For Slow Cooker:
While beef is cooking add remaining ingredients, except baking soda to the slow cooker
When the beef is done(and drained if need be) add to the slow cooker and mix well.






Cook on low 6-8 hours, high 3-4. Add in baking soda and stir well



Taste and adjust sugar per your preference, if it is still acidic add another pinch or two of baking soda and cook 1/2 hour more.

Lite Alfredo Sauce

I love alfredo but most recipes I come across are full of butter and heavy cream. Although that makes for a YUMMY sauce you dont always want all the extra fat and calories. I came across this years ago and have since tweaked it to fit my family...





1 1/2 cups non fat milk
3/4 cup low fat cottage cheese
salt and pepper to taste
1/2-1 tsp garlic powder
1/4- 1/2 tsp onion powder

1/2 cup fresh grated Parmesan(fresh is BEST , the green can stuff does work but not the same)

1 TB fresh basil leaves, chopped(you can use dried if you want, about 1 tsp)

2 TB cold water mixed with 2 TB cornstarch

Place milk, cottage cheese, salt, pepper, garlic and onion powder in a blender or food processor and blend smooth.
Pour into a sauce pan and add parm cheese.
Cook over medium heat, stirring constantly for about 5 minutes. Add basil. Bring to a boil then reduce heat and simmer for 10 minutes stirring often.

Add in cornstarch mixture and blend well. Heat and stir until thickened slightly.
You can add more cornstarch/water mixture if you want it thicker.

Use in place of any Alfredo sauce...makes just over 2 cups sauce
