Adapted slightly from Emeril's Easy Enchilada Sauce
2 TB butter
1 TB flour (or potato starch for gluten free)
1/4 cup chili powder
2 cups chicken stock
6 oz can tomato paste
1 tsp oregano
2 tsp cumin(more or less for your tastes)
1 tsp garlic powder(more or less for your tastes)
up to 1/4 cup water to thin (optional)
salt
Add in chili powder.
Slowly add in stock, paste oregano, garlic and cumin. Stir well and simmer for 15 minutes.
add water Salt as needed and adjust other seasonings per taste.
