Oat Wheat Bread

I modified my family favorite sandwich bread slightly and got this one. Delicious!









3 cups warm water
1 TB yeast
2 TB sugar(I use raw)
3 TB dough enhancer(not required but recommended)
1 tsp gelatin or agar agar
1 egg
2 TB olive oil
1 cup old fashioned oats
1/2 cup ground flax
3-4 cups whole wheat flour

In a bowl combine water, yeast, sugar and dough enhancer, mix gently and allow to sit for 5 minutes

Add in egg, olive oil , oatmeal, gelatin and flax.
Mix well.
Add in flour 1/2 cup at a time, switching to a dough hook or mixing by hand when it gets stiff.
Add enough flour until it is smooth and only slightly sticky.

I recommend kneading by hand for a few minutes at this point if you are using a dough hook.

Place in a greased bowl and allow to rise until doubled in a warm draft free place.


Punch down and divide into your loaf pans(I usually get 2 good sized loaves, but it depends on your pan size)

Allow to rise 1 hour more.

Preheat oven to 350.

Bake 45 minutes-1 hour , until a thermometer reads 190 degrees(or it sounds hollow when thumped)
Allow to cool slightly , then remove from pans and cool completely.
