Roasted Zucchini and Carrots with Cilantro

Lovely light veggie side to a Mexican Dish!

2 medium zucchini, sliced into sticks
3 large carrots, sliced into sticks
1 TB butter, melted
1 TB olive oil
1/4 cup, chopped fresh cilantro
garlic powder
1/2 fresh lime(optional)

preheat oven to 350
Combine butter and olive oil and toss the cilantro into it.

Place cilantro mixture into a small baking dish and toss veggies to coat.
Sprinkle with a light dusting of garlic powder and if using squeeze the juice of the lime over the top.

Place in preheated  oven for 15-20  minutes(depending on the thickness)until tender crisp.
