I am making this for my husbands Irish Car Bomb Ice Cream Cake but it is fantastic any time!!!
1 pint heavy cream
1 cup milk
3/4 cup sugar
2 eggs, beaten
3/4 cup Irish cream
in a sauce pan combine milk and beaten eggs.
heat over medium heat until you reach 165 degrees.
Remove from heat and stir well...cool
Add to a bowl and mix in sugar and heavy cream.
In the saucepan heat Irish Cream to a boil and boil, stirring constantly until it reduces to 1/2 cup.
Add to heavy cream mixture and stir well.
Chill completely and continue with your ice cream makers instructions....
I did not freeze to the hard ice cream stage because I was using it for the ice cream cake but it makes a fantastic hard ice cream too!
