4 medium russet potatoes(skin on or off, your choice)
1 tsp sea salt
1 large egg white
salt and pepper or other seasonings to taste
Slice your potatoes into fries of your size preference.
Allow to soak for 30 minute.
Drain and blot the potatoes DRY.
Add potatoes and your seasonings and toss to coat well.
Grease a baking sheet with a bit of olive oil (you want it WELL greased but you dont have to use a ton)and place the potatoes on the sheet.
Bake at 400 for 20 minutes, with a spatula scrape and turn the potatoes, bake 15 minutes more until golden brown. Serve immediately.
