Meatless Sloppy Joes

We love sloppy joes so I decided to add a veggie twist to them for our meatless night...











Filling:
1 tsp olive oil
1 clove garlic, minced
1/2 cup green bell pepper, chopped fine
4 cups prepared beans(pink, red, black, pinto, whatever you fancy--about 2-15 oz can, drained and rinsed)
1 cup tomato sauce(8 oz can)
2 cups diced peeled tomatoes(1-14.5 oz can)
2 TB cider vinegar
1 TB brown sugar
1 tsp yellow mustard
1/2 tsp onion powder
1 tsp chili powder
salt and pepper to taste
1 medium zucchini, shredded

Sliced Cheese 
Hamburger Buns

Heat olive oil over medium high heat and add garlic and green peppers, saute until tender.









Add remaining filling ingredients except zucchini , bring to a boil and reduce heat to medium simmer uncovered 15 minutes. 










Add zucchini and simmer 5 minutes more until the zucchini is tender.











Serve on toasted buns topped with cheese(we do pepper jack and havarti.)
