Very Best Chewy Ginger Snap Cookies

I found this recipe a few years ago and it QUICKLY became a family favorite. I cant remember where I found it  but I am glad I wrote it down because in my searches I have not come across the same one since. It makes a GREAT holiday cookie. You can color your rolling sugar to make them Christmas themed!


1/2 cup butter, softened
1 cup sugar
1/4 cup dark molasses
1 egg
2 tsp baking soda
2 cups flour
3/4 tsp ground cloves
1 tsp ground ginger
1 tsp cinnamon
1/2 cup crystallized ginger, chopped coarsely**



Rolling sugar:
1/2 cup sugar
1/2 tsp ground ginger

Instructions: Preheat oven to 375°F. 


Combine softened butter, sugar, molasses and egg. Using a mixing, beat well. 




Stir in crystallized ginger. 






















Sift dry ingredients together.
























 Add to wet mixture. Mix well.


























In a small bowl mix sugar and ginger(you can add coloring to this sugar to make your cookies festive). Form dough into 1 inch balls. Roll in ginger sugar. Place on greased cookie sheet, 2 inches apart.









Bake 8-10 minutes. Cool on sheet for 2 minutes, transfer to foil or wire rack and cool completely


Makes 3 dozen cookies.












**You can find jars/tins of Crystallized ginger in most health food/specialty grocery stores.... but if you cant find it , it is super easy to make(and quite a bit cheaper), fresh ginger root is found in the produce department of any grocery store ....just follow instructions HERE
