Baked Bacon Cheeseburger Egg Rolls

Yummy for an appetizer on game day or delish for dinner too!
 Edit: Try these in an air fryer if you have one!!! spray/ brush with oil, cook 5 minutes on 400, flip, spray/ brush again and sprinkle the sesame seeds... and 5 minutes more!











1 1/2 lbs ground beef, seasoned to taste, cooked, drained and crumbled small
6 slices thick cut bacon, cooked crisp and diced
1/3 of a medium sweet onion,(approx 2.5 oz) diced
1 medium dill pickled, diced small
1 roma tomato, diced small
1 1/2 cups shredded cheddar

1 recipe SuperPickle Secret Sauce

1 lb egg roll wrappers (approx 20)


1 egg
1 TB water
Sesame Seeds


Cook and drain ground beef, add to a large bowl.








Add diced bacon, onions, pickle, 1/4 cup Secret Sauce(save the rest for dipping!)and tomato.










Chill if it is still warm then add cheddar and mix well.










Place a ER wrapper in a diamond orientation, scoop a healthy 1/4 cup filling onto wrapper spreading evenly.










Fold bottom corner over the filling about 1/2 way up the wrap.










Moisten exposed edges with water then fold in both the sides snugly.














Then fold down over bottom half and roll gently. Place on lightly greased baking pan and repeat with remaining ingredients.










Beat the egg with water and brush each roll lightly then sprinkle with sesame seeds.










Preheat oven to 375, bake for 15-20 minutes until crisp!











Enjoy with extra Secret Sauce



Alternatively these could be fried like traditional Egg Rolls!!

Pizza Pulled Pork Sandwiches

I had a pork roast that I had defrosted but then we ended up doing BBQ pork ribs that night(couldn't pass up the DEAL! I needed to use up the roast but nothing was striking me. My kids are ALWAYS up for pulled pork but since we JUST did BBQ ribs I didn't want to go that route. My son always suggests pizza as an alternative to everything when nothing sounds good......that got me to thinking and here we are ;)
I did the pork in an electric pressure cooker.
Another one I missed out on some pics :(





2lb pork loin roast

2 TB olive oil
salt and pepper

1 cup chicken broth

1/2 TB oregano
1/2 TB basil
1/2 TB parsley
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp lemon pepper seasoning
1/2 tsp red pepper flakes

2 cups + pizza sauce (to your sauciness preference)

25 slices pepperoni, chopped

1 large green bell pepper, chopped

Mozzarella, shredded

Hoagie Rolls


Other Topping/Mix in ideas:
Mushrooms
Black Olives



Season pork roast generously with salt and pepper.
Put olive oil in the bottom of the electric pressure cooker and set to saute.
Sear the roast for  2 minutes on each side.

While it is searing mix the rest of the seasonings.

Remove the roast from the cooker and rub the seasoning mix into the roast.

Return to the pot wit the chicken broth.

Set pot to high pressure for 50 minutes.

Natural release for 15 minuets then release the rest of the pressure.









Remove from pot and shred the pork well.
Save the cooking liquid in another bowl.
Return the pork to the pot, add sauce to your preference......and you can add some cooking liquid to thin it as necessary.







Add the bell pepper and sliced pepperoni, and any other "toppings" that strike your fancy.










Heat on saute until it is bubbly.

Scoop into toasted buns, top with cheese and enjoy!












Goat Cheese Stuffed Spinach and Sun Dried Tomato Meatballs

I realized about 1/2 way through making these that they were looking more and more delicious and I wanted to put them on my blog. So not as many process pictures but you get the idea!










1½ lbs ground turkey
1 egg
½ cup bread crumbs
about 6 sun dried tomatoes (packed in oil)*, chopped
1 cup frozen baby spinach (mine was leafy, not packed tight)
1 TB oregano
1/2 TB parsley
1 ½ tsp garlic powder
1 tsp red pepper flakes
salt and pepper to taste

about 2 oz goat cheese (feta would work well if you are not a goat cheese fan)
extra oil from the sun dried tomatoes

*use your own judgement here, different brands have different cuts. Mine were packed whole.

In a large bowl mix the meat, egg, crumbs, tomatoes, spinach and seasonings, gently.

Fashion into meatballs of your size preference (I made 24 decent size ones.)

Poke a small indentation in each one.

Roll a small ball of goat cheese(mine were about ½ inch balls) and place in the indentation, then roll the meat to seal it in.

Place on a lightly greased baking sheet (I foil lined mine first). Drizzle extra oil from the tomatoes over the top of each ball, turning to coat.




Preheat oven to 350 degrees

Bake for 20-25 minutes until internal temp is 165°



















I served mine over zoodles with a roasted red pepper sauce! Same one I used HERE and I threw in a  handful of shredded mozzarella too

Fiery Hawaiian Pizza Swirls

I have been seeing savory swirls around a lot lately. I decided to do one of my favorite pizzas in one!











1 pizza crust rolled out to a large rectangle
*My recipe at the bottom*



1 1/2 TB butter, softened
1 clove garlic
1/2 tsp salt


Thinly sliced ham (I used about 18 slices on mine)
3 oz shredded mozzarella
3 oz shredded provolone
5 slices thick cut bacon, cooked crisp and chopped
1/2 cup Roasted Red Peppers
3/4 to 1 cup Pineapple chunks( drained and allow to dry a little if using canned)
Pickled Jalapenos to taste
Hot sauce to taste



Pizza Sauce (homemade or store bought)




When you have rolled out your dough, combined softened butter, garlic and salt, brush the entire crust with this mixture.








Top with ham, pineapple, red peppers, cheese, then add bacon, jalapenos and hot sauce.











Roll up like you would do cinnamon rolls and slice into rolls with a sharp knife (I got 12 with my roll, yours might be less or more depending on your rectangle and slice size)















Place slices in a well greased baking dish.

Bake at 300 degrees for 30-40 minutes until they are starting to get golden brown on the top.











Top with pizza sauce and a little more parm, then bake 10 minutes more.



 Allow to set for 5 minutes before slicing.











Crust:
1 cup very warm water
1 teaspoon yeast

2 1/2 cup flour
1 teaspoon salt
2 tablespoons olive oil
1/4 cup romano cheese
1/2 cup parmesan cheese

Combine water and yeast and allow the yeast to proof for 5 minutes.
Add in olive oil and salt, then 1/2 cup flour at a time. Knead for 5-7 minutes adding a touch more flour if necessary. Add in cheeses and knead well
Immediately roll out into the rectangle and allow to sit for 5 minutes.

Sheet Pan Bacon Cheeseburger

I am trying to lower my carb intake. Last week I made an excellent sheet pan taco that the whole family LOVED. (They added tortilla chips on the side of theirs). I figured that the same concept would apply to a bacon cheeseburger! I bought them buns to put their slices on if they like and we can all enjoy together.








2 lbs ground beef (I used 88/12)
Season to taste (I used garlic powder and some FreshJax Grill Master Burger Seasoning)
2 TB water

My Pick of Toppings: (to taste, just don't over load)
SuperPickle's Secret Sauce 
Red Onion
Dill Pickles
6 thick slices bacon, cooked and crumbled
French Fried Onions
A good mix of white and yellow cheddar
Tomato
Lettuce





Mix your ground beef, seasonings and water.

In a shallow rimmed 9 x 11 baking pan (lightly greased) pat the meat mixture evenly to the edges.

Spread your sauce over the meat (you can use any sauce you like Ketchup, Mustard, Mayo, BBQ, a combo, whatever you like)
Top with chopped onions, pickles and the crumbled bacon.




Bake at 400 degrees for 20 minutes.

Carefully remove from the oven. Gently tilt over a sink or bowl to drain pan of grease as best as possible.







Top with French Fried onions and cheese. Return to the oven for 5-10 minutes more to melt the cheese thoroughly.










Remove from oven and allow to set for 5-10 minutes












Slice and top with fresh shredded lettuce and tomatoes as desired.












You can put the slice on a bun or eat as is!











Primavera Chicken Casserole

Yummy dish with good protein and veggies!















2 lbs chicken breast, sliced into bite sized slices
1/4 cup quality Italian dressing

1 medium zucchini, thinly sliced into 1/2 moons
1-2 roma tomatoes ,  sliced into 1/2 moons
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1/2 medium red onion, thinly sliced
2 cups chopped baby spinach

2 medium avocados, diced (optional)

1TB olive oil

garlic powder
basil
salt and pepper
(all to taste, start with 1/4 tsp each)

2 cups mozzarella cheese, shredded     


Place sliced chicken in a large casserole dish, toss with Italian dressing and marinate for 30 minutes.










Gently toss the vegetables(except avocado) in with marinated chicken making sure they are distributed evenly.


Sprinkle all the spices/herbs evenly over the top.












Drizzle with olive oil and top with cheese.













Cover with foil (I spray cooking spray on the underside to prevent cheese from sticking. Bake in 350 degree oven 30 minutes until the chicken is cooked through, uncover and cook 10-15 minutes more until the cheese is browning.










Allow to set for 10 minutes before serving.














Top with diced avocado and enjoy!

Sweet Chili Turkey Sloppy Joe Sliders

I do love this combo, I have made it into pizza, burgers, quesadillas and more. Now for Sloppy Joe Sliders!













1 package/recipe dinner rolls , sliced*

1 lb ground turkey
1 tsp garlic powder
1 tsp ground ginger
3/4 cup thai sweet chili sauce


1/4 cup chopped sweet onion
1/4 cup chopped red onion
1/4 cup chopped green onion
1/2 small zucchini, sliced thin

1 cup shredded mozzarella
1/2 cup sharp cheddar
red pepper flakes to taste

3 TB butter, melted
garlic powder
salt
more red pepper flakes

* I used Sweet Hawaiian Rolls, it was a nice sweet touch!




Brown ground turkey with garlic powder and ginger.















When no pink remains, add the sweet chili sauce, stir well, cook 5 minutes more until thick and bubbly.














 Chop your veggies and slice your (still attached) rolls....next time I think I would toast the bottom layer slightly before assembly, just to keep it a little crisper.








 Spread the turkey over the rolls, add onions, zucchini, and cheese then sprinkle with crushed pepper flakes to taste.









Brush with melted butter, sprinkle with garlic powder and salt and more red pepper flakes


Bake at 350 degrees for 20-25 minutes until heated through, brush with a little more butter, allow to set for 5 minutes before slicing.













Slice and Enjoy!!
