Spicy Hawaiian Roast Beef Sandwiches

This was my husbands dinner request for his birthday this year.

Copycat King's Hawaiian Bread  made them into hamburger bun shapes.
Of course you can use store bought ones if you like!

Amounts to taste

Quality Roast Beef
Roasted Pineapple Habanero Sauce(Homemade or at Costco by Rothschild Farms)
Mayo
Roasted Pineapple Slices(Fresh)*
Roasted Red Pepper Slices
Jalapeño Slices
Swiss Cheese

I use about a 2: 1 ratio mix with the Mayo and Pineapple Habanero sauce depending on how many you are serving...for example mix 1/4 cup mayo with 2 TB PH sauce.

Slice your rolls, spread with mayo.

Pile with roast beef, pineapple, red peppers and jalapeno. Bake in a preheated 350 oven until heated through, add cheese and continue to heat until the cheese is melted. Top with the other bun, slice and serve

*Roasted Pineapple

1 fresh pineapple, sliced, skin removed....and I used a 1 inch biscuit cutter to remove the cores and make pretty rings.
2 TB of brown sugar
juice of 1 lime

Preheat oven to 450
Line a baking sheet(or 2) with parchment paper
Place rings or slices on the paper

Sprinkle evenly with brown sugar. Drizzle lime juice over the top

Bake  for 25-30 minutes, until nicely browned.
