Gluten Free Pizza Chicken Stuffed Garlic Bread

I got an idea for a stuffed garlic bread and pizza chicken popped into my head!! MMMM its a big yummy garlicky calzone!


Unless specified amounts are to taste, just don't go overboard on the fillings or it will burst...

Pepperoni(I used Turkey Pepperoni)
Mozzarella Cheese



3 smallish chicken breasts

garlic powder
oregano
basil
salt and pepper

Place breasts on a broiling pan, sprinkle with liberally with seasonings to taste and broil until the temperature reaches 165 degree minimum(time will depend on the thickness!)
While it is cooking get the pizza sauce and garlic bread going.

Set aside to cool, then slice.




Pizza Sauce:
1 cup tomato sauce
2 tsp dried oregano
1 tsp dried basil leaves
1 tsp sugar
1/2-1 tsp garlic powder
salt and pepper to taste
dash of onion powder
1/4 tsp lemon juice



Combine all ingredients in a saucepan. Heat the sauce until it starts to bubble, then turn the heat down and simmer, covered for 30 to 60 minutes, until it reaches the thickness you desire.





Garlic Bread:

2 tablespoons dry active yeast
1 cup brown rice flour
1 cup tapioca starch
1/3 cup millet flour
2 teaspoons xanthan gum
2 teaspoons Italian seasoning
1 teaspoon salt
1 1/4 cup warm milk
2 teaspoons olive oil
2 teaspoons apple cider vinegar
2 cloves garlic, minced

2 tablespoons butter
garlic powder
parsley flakes


Preheat oven to 425°F. Grease a baking sheet.

Combine all dry ingredients in you mixing bowl













Combine liquid ingredients and on a low setting of the mixer start pouring in the liquid until fully combined.








Beat on medium for 2 minutes.  Add garlic, and mix until just combined.


Divide dough into 2 sections.








On a greased sheet Pat a section into a flat rectangle about 1/4 inch thick.

(No photos here, it was messy and I didnt have an extra set of hands to photograph)

Spread the sauce, pepperoni, chicken, (I added another layer of pepperoni here) and cheese.

Carefully pat out the other side and place gently on top, sealing the edges( It is TRICKY, make sure you have damp/wet hands and you can smooth it out as you go)

In a small bowl combine the melted butter, garlic powder and parsley flakes. Brush on the top of the garlic bread.

Bake in preheated oven for 25-30 minutes, until nice and golden brown.






Brush with any remaining garlic butter mixture once again. Allow to set for 5 minutes before slicing.
