Slow Cooker Apple Pie Chicken



This is so delicious and a pretty simple prep, then just set it and go. Just a few more minutes of prep at the end and you are ready to go.






4-5 boneless skinless chicken breasts
1 TB canola oil
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice

1/2 cup apple juice concentrate*
1/4 cup water

3 TB cornstarch
1/4 cup cold apple juice(or water)
1 large apple


Mix seasonings together











sprinkle half on the chicken breasts.











Heat oil in large pan over medium heat. Place chicken breasts and sear for 2 minutes, sprinkle remaining seasoning, then flip and sear the other side.




Transfer to slow cooker, mix apple juice concentrate and water and and pour over the chicken.
Cover and cook on low 6-8 hours.

In the last hour mix cornstarch into cold apple juice (or water) stir until dissolved and pour into liquids in the slow cooker. Stir well.






Core and slice the apple into thick slices(to prevent over browning dip in a solution of 1 TB lemon juice to 1 cup water),










place 1 slice over each breast, scoop a little sauce and pour over the apple slices. Recover, cook until the sauce is  thickened and the chicken is min temp of 165



Place on a plate with an apple slice and top with a little sauce









* if you want to used fresh juice, just simmer 1 1/2 cups until it has reduced to 1/2 cup.....or you can just use 3/4 cup apple juice, the flavor wont be a strong though.
