Black Bean Veggie Burgers

We love a good veggie burger at our house. I have several favorite recipes so I decided to combine and see what I got! The results we delicious, I think we have a new favorite! 
Makes about 6 good sized patties




6 hamburger buns
1 can black beans, drained and rinsed(about 1 3/4 cups after soaking and boiling if you are going from dried)
1 tsp olive oil
1 small zucchini
1 medium carrot
1 small onion
2 cloves garlic
1 egg
3/4-1 cup bread crumbs(Gluten free crumbs for those that need it!)
1-2 tsp cumin(per your preference, cumin is pretty overpowering so be careful)
1-2 tsp hot sauce(may be omitted)
salt and pepper to taste
(I like to add chipotle powder but no one else in the house really likes it so I sprinkle it on my own patty)


Drain and rinse your black beans, Even run a paper towel over them to get off excess liquid.















Place them in a food processor and pulse until they are chopped well but not pureed(or mash by hand)
Place beans in a large bowl.










Shred zucchini , carrot and onion













In a pan over medium heat  heat olive oil, add veggies and sautee until tender, about 5 minutes











Add egg and seasonings to black beans. Mix well













Add in sauteed veggies and mix.












Add in bread crumbs starting with about 1/2 cup. Then add in as much as needed until it all holds together, but not TOO dry.












With floured(or cornstarch for GF) hands scoop by about 1/2 cup fulls and shape into patties, lightly flouring(starching) each side.
Allow to set in the fridge for 30 minutes
Preheat oven to 375

Place patties on greased baking sheet and bake for about 15 minutes on each side.










Top as you would a burger! Enjoy!
