Elvis Inspired Oatmeal Cookies(Peanut Butter, Banana and Bacon!)

Elvis was known to love fried peanut butter, banana and bacon sandwiches....I took that concept and made it into a cookie!












1 large mashed banana
3/4 cup natural peanut butter(No added sweetener)
1/3 cup packed brown sugar
1 egg
1 tsp vanilla
1 tsp baking power
1/2 tsp baking soda
1/4 tsp salt
2 cups rolled oats
6 oz bacon, cooked crisp and chopped well

Grease 2 cookie sheets and preheat oven to 350

Mix mashed banana with peanut butter, brown sugar, egg and vanilla.

Mix powder, soda, salt and oats together then mix into the peanut butter mixture.

Gently fold in bacon.







Scoop by rounded spoonful onto greased cookie sheet.  Flatten each cookie out slightly , they will not spread much during baking.










Bake 9 minutes in preheated oven.

Allow to cool on sheets for 2-3 minutes before transferring to wire rack to cool completely.

Makes 2 dozen.

Chicken Enchilada Nacho Casserole

Nachos with an Enchilada flair all layered up into a super yummy crunchy casserole!













1.5-2 lbs (bone in) skinless chicken thighs
1 batch enchilada sauce recipe (or 2 -10 oz cans )

12 oz tortilla chips, roughly crushed
2 cups diced tomatoes(1-14.5 oz can)
2 cups cooked black beans(1-15 oz can, drained and rinsed)
1 cup frozen corn kernels, thawed
1 red bell pepper, diced
1/3-1/2 cup jalapenos or  green chilies (either or both for your heat preference)
2 cups shredded cheese(pepper jack, cheddar, colby jack, monterrey jack....up to you)
3 green onions, sliced
cilantro, chopped


In a roasting pan or baking dish place the chicken thighs, pour over 1/2 of the enchilada sauce.
Cover and Bake at 355 degrees until cooked through (time will depend on thickness of thighs, cook to internal temp of 165)

Cool the thighs and remove all meat from bones and shred well. Set aside.



In a bowl mix remaining enchilada sauce with tomatoes, beans, corn, peppers and jalapenos or chilies. Add cooked chicken and toss well.












Grease a 9 x 13 pan very well. Layer 1/2 the tortilla chips.












Then layer 1/2 the meat/bean/veggie mixture.











Then the other 1/2 of the chips and meat mixture. Top with the cheese, green onion and cilantro.











Cover and bake 30 minutes, uncover and bake 15 minutes more until heated through.












Top with some fresh tomatoes, avocado, shredded greens, sour cream.....just about any nacho ingredient you like!

Tilapia Burgers

I had tilapia out but the recipe I had in mind just wasn't doing it for me so I decided to make a burger. I was going to put them on savory waffles but then I got busy so I just tossed them on regular buns. I think waffles would be better!











1lb tilapia filets, cooked (I steamed mine)
1/2 cup bread crumbs (I used my fluffy gluten free bread)
1 large egg
1 TB dijon mustard
1 TB lemon juice
1 tsp lemon zest
1 TB dried parsley
1 TB fresh chives, chopped
1 green onion, whites and greens, chopped fine
1 tsp olive oil
1 clove garlic, minced
salt and pepper to taste

provolone cheese
tartar sauce
other toppings to taste
-I was going to use spinach, but it my supply had gone bad :(

 Flake your tilapia up well

Add remaining ingredients
 Mix well
Scoop by 1/3 cupful and shape into patties, place on well greased baking sheet




Broil for 5-7  minutes, GENTLY (they are pretty fragile!) flip and broil 5 minutes more until you reach a temp of 165. Top with provolone cheese and broil until it is well melted.





Top your buns as desired and enjoy!

Banana Pancakes

Super Easy, Gluten Free and no added Sugar!!












4 large bananas
4 large eggs
1/4 cup ground flax






In a blender or in a bowl with a handheld blender blend bananas, eggs and flax.










Preheat griddle to 325(low-medium) and grease well
Pour by 1/4 cupful onto hot griddle and cook 3-5 minutes, flip and cook 3-5 minutes more.










Top as desired and serve hot!
