4 medium russet potatoes(skin on or off, your choice)
1 tsp sea salt
cold water
1 large egg white
salt and pepper or other seasonings to taste
Slice your potatoes into fries of your size preference.
Place in a large bowl and fill with water to cover. Add 1tsp salt and stir it up well.
Allow to soak for 30 minute.
Drain and blot the potatoes DRY.
In the bowl whisk the egg white until frothy.
Add potatoes and your seasonings and toss to coat well.
Grease a baking sheet with a bit of olive oil (you want it WELL greased but you dont have to use a ton)and place the potatoes on the sheet.
