This is a modification of a copy cat Applebee's Blackened Chicken Salad. I changed it to use leftover turkey breast. I will include the directions for the chicken salad too!
This make 2 good sized salads plus 3 kid sized ones.(Kids who like salad so pretty good kid sized)
4 cups shredded turkey breast
3 TB lime juice
2 TB soy sauce
1/2 TB worcestershire sauce
Combine above and set aside in the fridge for at least 30 minutes
Cajun Seasoning Blend:
1/2 tablespoon salt
1 teaspoon sugar
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon white pepper
Combine above in a small dish, then sprinkle the marinated meat with it. As much or as little spice as you like.
Heat 1 TB butter in a skillet over medium high heat.
Pour the meat(with all juices) and heat until the meat starts to blacken slightly....the sugar and lime juice will cause this , watch it carefully you dont want it to burn, especially since you are working with pre cooked meat.
Salad:
8 cups baby spinach, washed and drained/dried(can be any greens you like, we choose spinach because our kids get rashes when they eat any variety of lettuce)
3/4 cup shredded red cabbage
3/4 cup shredded carrot
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1 large tomato, diced
2 hardboiled eggs, diced
Toss veggies together add cheese, tomatoes and eggs and turkey.
Top with Honey Mustard Dressing:
1/4 cup mayonnaise
1/4 cup Dijon mustard
1/4 cup honey
1 tablespoon prepared yellow mustard
1 tablespoon white vinegar
1/8 teaspoon paprika
To make with Chicken Breasts:
Marinate in the solution above adding 1 cup water to the lime juice , soy and worcestershire sauce.(at least an hour in the fridge)
Sprinkle one side of the breast with at least a TSP of the cajun seasoning , spread it on good!
Melt butter in a pan over medium high heat and sear for 2-3 minutes, sprinkle seasoning on the other side and flip to sear the other side.....finish it off on the BBQ grill....or you can broil it!
Slice and top the salad.
