Garlic Parmesan Bread

This is my FAVORITE to serve with spaghetti or lasagna!






2 egg whites

2 1/4 t yeast
1 cup warm water
2 tsp sugar
1 TB dough enhancer(optional but recommended)
2 T butter, melted
2 cloves minced garlic
1 tsp salt
3 c flour
1/4 cup grated Parmesan cheese(fresh grated, not canned powdery stuff)


Beat egg whites stiff and set aside.











In a kitchenaid bowl combine yeast, sugar, water and dough enhancer give it a quick stir and allow to sit for 5 minutes until bubbly.








With the flat paddle mixing, Add in butter, garlic and salt. 











1/2 cup at a time start adding the flour, after about 1 1/2 cups then add in egg whites and switch to the dough hook. Continue adding flour(you could end up using slightly more or less than the 3 cups) until the dough is holding together and pulling everything from the side of the bowl. 







Add in parmesan cheese. Knead until smooth and elastic.










Remove from dough hook and place in a cooking spray coated bowl. Cover with a dish towel 










allow to rise until doubled(about an hour)
Punch down and knead slightly . 









Shape into a long loaf. Press down the center 









 roll it up into a round loaf shape. 












Place seam side down in a greased long loaf pan.(this can be done in a smaller pan to yield a higher loaf, we like long and lean LOL)










Allow to rise about 30 minutes. Then place it in a COLD oven and turn it to 350.










to give it a bakery sheen, after about 15 minutes in brush lightly with mixture of 1/4 cup cold water and 2tsp cornstarch. Brush again 3 minutes before removal. (total baking time should be about 25 -30 minutes until hollow sounding)


Remove from pan immediately and allow to cool.





Slice down the center and top as you choose!!

Our preference is this


4 TB softened butter
1 clove garlic , minced very fine
2 tsp parsley
2 TB grated Parmesan cheese
 Mix all in a small bowl and spread on each half of the bread
If it is still warm from baking just stick it directly under the broiler.
If you are starting with cooled bread spread the butter on each half, place the halves together and wrap it in foil and heat it at 350 for 15 minutes, then unwrap and place it under the broiler until your preferred brownness.
