I love French Dips! Usually we just make them from leftover Roast Beef but this time I decided to make a roast specifically for the sandwiches.
French Rolls, homemade or store bought...I found a good Gluten Free recipe here
1.5 lbs beef roast
1 TB olive oil
1/2 cup red wine(beef broth or stock is a fine sub)
1 can condensed french onion soup(LINK for homemade)
2 cloves garlic, minced
1 small onion, sliced
2 cups beef stock
1 tsp dried oregano
salt and pepper to taste
In a large skillet heat oil over medium high heat.
Sear roast on all sides , remove roast to slow cooker
Add red wine to the hot pan. Simmer 2 minutes, scraping the bottom to get any beef particles up.
Add Remaining ingredients to the pan and simmer for 5 minutes more.
Pour entire pan contents over roast.
Set to low and cook 7-9 hours until a minimum temp of 165.
Remove roast to a plate, cover and keep warm
Measure 3 cups of the juice from the slow cooker (subbing with beef broth to make 3 cups if necessary)
Strain well to remove any particles.
Au Jus :
3 cups beef drippings
1 beef bullion cube
1 tsp kitchen bouquet browning sauce
1/2 tsp onion powder
1/2 tsp oregano
1/2 tsp basil
1/4 tsp parsley
pepper and salt to taste
1 TB cornstarch
1/4 cup cold water
In a pan bring beef drippings and seasonings to a boil. Simmer 5 minutes
Mix cornstarch and water and add to broth, mix well and simmer until thickened slightly.
Slice or shred roast as desired
I like to add my sliced meat to the au jus and let it simmer for a minute
Toast your buns, top with meat and cheese if desired
Serve with a bowl of Au Jus for dipping.
