Cranberry Apple Pork Roast with Lavender


2-3 lb pork roast

2 cloves minced garlic

1-1/2 cups cranberries

3/4 cup apple juice

1/4 cup white sugar

1/4 cup brown sugar

1 medium diced apple

salt/pepper to taste

1 tsp lavender buds

Place cranberries in sauce pan over medium heat with 1/4 cup apple juice and 1/4 cup white sugar, boil until cranberries pop, remove from heat and allow to thicken slightly.

Place roast in slow cooker and rub with minced garlic

Add remaining apple juice, brown sugar and diced apples to cranberry sauce mix well. Pour over pork roast, sprinkle with salt and pepper, and top with about 1 tsp crushed lavender buds.

Cook on low 6-8 hours until 160 internal temp.
