3 red potatoes, peeled and diced
1 large apple, diced
1 cup fresh or frozen green beans
1 cup fresh or frozen corn kernels
1 medium onion, minced
2 medium carrots, peeled and diced
1/2 medium red bell pepper, diced
1/2 medium green bell pepper, diced
4 roma tomatoes, peeled and diced(roasted if you have the time!)
4 cups vegetable broth
2 cups apple juice
1 tsp tomato bullion
1 TB parsley
salt and pepper to taste
Combine all in a slow cooker
