We wanted to do something kind of lite for dinner tonight so we decided on a nacho platter. I wanted to use up the leftovers from last nights meatless sloppy joes so I pureed them up into a refried bean consistency and used them as the base. Since they have a slightly sweet flavor I thought a sweet salsa would go great with them!
Salsa:
4 ripe but firm peaches
2 roma tomatoes, seeded
1 small white onion
3 green onions
1 jalapeno(seeded if you want to reduce heat)
1 small red pepper, seeded
1/4 cup fresh cilantro
1-2 TB lime juice
1/2 tsp red pepper flakes
salt to taste
Chop ingredients into large chunks and place in food processor.
Pulse until desired consistency.
Place in a bowl in the fridge and allow to sit for 30 minutes for flavors to mingle.
On the bottom of a large baking pan spread refried beans(as much as you like) into a smooth layer. Top with tortilla chips and sprinkle with desired cheese(I used a Mexican blend)
Preheat oven to 350 and bake until cheese is fully melted and beans are hot.
Remove from oven and top with Peach Salsa.
Serve with Sour Cream and Guacamole.
