Pumpkin Pie Cream Candies
I have created a version of Cadbury's Creme Eggs but with a Autumn/Halloween Flair!
SO DELICIOUS!!
Filling:
1/2 cups light corn syrup
1/4 cup butter, softened --VERY IMPORTANT!!!! SOFTENED NOT MELTED!!!!
1 teas. vanilla
1/4 teas. salt
3 cups powdered sugar
2-3 tsp pumpkin pie spice, to taste
2 drops red food coloring
4 drops yellow food coloring
Coating:
1- 12 oz. bag white chips
2 Tbls. shortening
Red and Yellow food coloring to your orange preference
Green food coloring
Combine corn syrup, butter, vanilla and salt in large bowl. Beat well with
electric mixer.
Add sugar, one cup at a time, mix very well,
add small amount of food coloring to tint a brownish orange.
Refrigerate for 2 hours until quite firm.
When firm roll into balls using about 1 TB or so of the dough (to your size preference)
In a large microwave proof bowl heat white chips and shortening for 1 minute on high power, remove and stir, heat longer to until chips are fully melted.
Remove a small amount to another bowl and tint green for the stems
Tint the rest with yellow and red to make your desired orange color
Carefully dip each filling ball in the melted chips and coat completely.
Repeat with remaining balls. Add a second coat(you may need to reheat the chips at this point) and immediately press with a tooth pick to create pumpkin lines and add a tiny amount of green melted chips for a stem.
